This is pretty good offering. Substance and shape. Hefty serve of plum and blackberry-like fruit with candied orange and saltbush notes as highlights. Tannin is gruff in a good way. A couple of years in a cool, dark place wouldn’t do it any harm.

Cool-pressed and sat for 18 months in French Oak, this indulgent “Jester” Shiraz shows silky tannins and bright acidity with lolly-shop flavours of chocolate, mint and raspberry peeking through the classic plum and blackberry notes of Aussie Shiraz. A long savoury finish to follow makes this a truly luxurious wine indeed.
Jester Shiraz fruit is crushed immediately after being delivered to us at the winery. We allow the skin and juice mix to warm naturally over a period of several days, after which it begins fermentation. The ferment is held cool, to retain the bright primary fruit characters which appear in the resulting wine. Following ferment, we carefully press the wine to separate it from the skins. The wine is then transferred into oak barrels where it stays for eighteen months before bottling.
Founded by Frank Mitolo and run in close collaboration with growers the Loprestis, Mitolo run according to an initial business plan of just six words: individuality, integrity, quality, purity, elegance and power.
The Italian heritage shared by Mitolo and the Loprestis (Mitolo’s family hail from the Abruzzo region of Italy) is as strong an influence as the unique soils of the McLaren Vale, and inspired the company’s aspiration to create wines that are forte e gentile, or strong and gentle.
