Our Notes
It’s Sauv Blanc, but not as we know it - while there’s breezy, quaffable mouthfeel and loads of fresh fruit, it’s also bringing the unexpected profile of dried apricot, passionfruit and white flowers.
Light and bright, almost slippery in the mouth, and works as wonderfully solo as it would with an entrée of goat’s cheese & bruschetta.
From The Winemaker
Not your typical Sauvignon Blanc. The fruit was destemmed and left on skins for 4 days to pick up flavour, texture and complexity. The fruit was then gently pressed. Half the juice was fermented in a stainless steel tank at a cool temperature to enhance fruit characters. Half was fermented on light lees in older hogheads to enhance texture and mouth feel.
The resultant wine is complex with subtle fruit aromas and a gentle leesy, saline texture.
About the Winery
Thousand Candles exclusively use fruit from their estate, a picturesque and dramatically hilly plot in the Yarra Valley. The focus is on terroir, with some early release lacking varietal labelling entirely so as to leave the Candles team free to choose whichever grapes best expressed the soils and microclimates of the site.
